Air Fryer Beef Pot Roast Recipe
A traditional pot roast has three main ingredients: the roast beef, potatoes and carrots
- 1.1kg beef topside/top round roast
- 1 tbsp soy sauce
- 4 tbsp Worcestershire sauce
- 1 tbsp dried Italian seasoning
- 4 large carrots
- 5 medium potatoes
- 1 tbsp extra virgin olive oil
- 2 tsp dried rosemary
- 1 tsp dried thyme
- 1 tsp dried parsley
- Salt and black pepper
Score the meat, then drizzle over the soy sauce and half the Worcestershire sauce and rub in all over. Season the beef with the Italian seasoning and salt and pepper, making sure the seasoning gets into the scored sections.
Put the beef in the air fryer basket and cook at 180C/360F for 20 minutes.
While the beef cooks, peel the carrots and potatoes and cut them into quarters. Put them in a bowl and add the rest of the Worcestershire sauce, the olive oil, rosemary, thyme, parsley and a generous sprinkling of salt and pepper.
When the air fryer beeps, add the carrots and potatoes into the gaps in the basket. Cook at the same temperature for a further 25 minutes, at which point it will be rare to medium – add an extra 10 minutes for medium, or an extra 15 minutes for well done.
Allow to rest for five minutes, then serve.
