Shaun’s culinary philosophy is deeply rooted in food provenance, adopting a 30-mile rule for sourcing ingredients from a network of local suppliers, as well as ingredients grown and foraged in the restaurant’s very own kitchen garden. With a focus on hyper-seasonality, Shaun is passionate about storytelling through food. In homage to much of his childhood spent in Yorkshire, the ‘Taste of Home’ tasting menu is an exploration of the rich bounty of exceptional regional produce available to him.
Underpinned by classic culinary principles brought to life by modern techniques, during mid-winter guests can expect seasonal nuances of venison, game and truffle, alongside earthy root vegetables and produce that has been grown and preserved throughout the year.
Offered alongside the ‘Taste of Home’ menu, guests are invited to sample the expertly curated ‘Signature Wine Pairing’ or ‘Prestige Wine Pairing’, carefully crafted to complement the flavours and textures of the restaurant’s seasonal ethos. The pairing regularly changes to reflect the seasonality of the food, with wines drawn from celebrated and lesser-known European, New World and Asian producers.

The Dales Suite, inspired by 18th-century décor, is available for up to 18 guests, or to watch the magic of service unfold, the Kitchen Table can be enjoyed for up to six guests.
