Heat one tablespoon of the oil in a large frying pan over medium heat, then add the chilli, half the garlic and a pinch of salt and fry for one to two minutes until softened. Add the tomatoes and cook gently for about 20 minutes.
Heat the remaining oil in a small saucepan, add the remaining garlic and heat through for 20 seconds, until just browning. Add the beans, then using a potato masher, coarsely mash the beans and stir in plenty of salt and pepper and the cheddar.
Stir the lime juice and coriander or cilantro into the tomato sauce. Make four holes in the sauce and crack an egg into each one. Cook for three minutes until set (cover with the lid for the last 30 seconds just to firm up the whites).
Meanwhile, heat a frying pan over medium heat. Cook the tortillas for one minute on each side, until golden and hot. Transfer to four plates and spread the beans over the tortillas. Top with tomato salsa and the eggs, and serve with lime wedges and guacamole or sour cream if you like.
