How To Make This Super Healthy Stir Fry
Easy to make and packed full of veggies, this stir fry makes a great quick dinner
Taste the rainbow with this stir fry - the perfect way to use up any leftover vegetables.

Ingredients
- Oil for cooking
- Small thumb of ginger (minced)
- 1 garlic clove (minced)
- 2–3 spring onions (chopped into small pieces)
- 1 yellow pepper (finely diced)
- 1 courgette (ribboned)
- 8 tender stem broccoli spears (sliced in half lengthways)
- 1 JAZZ™ Apple (grated)
- 1 chilli (finely diced)
- 2 tbsp Hoisin sauce
- Coriander to serve
- 2 tbsp soy sauce
- 2 cups of leftover rice
- Splash of water
Method
Fry the spring onions, chilli, broccoli and peppers in a hot pan for four minutes.
Add the courgette, the garlic and ginger and cook for a further four minutes.
Add the grated apple and hoisin sauce and cook for a further two to four minutes until the broccoli is to your liking.
Remove from the pan and serve in a bowl!
