How To Make This Super Healthy Stir Fry

Easy to make and packed full of veggies, this stir fry makes a great quick dinner

Taste the rainbow with this stir fry - the perfect way to use up any leftover vegetables.
Serves

Ingredients
  • Oil for cooking
  • Small thumb of ginger (minced)
  • 1 garlic clove (minced)
  • 2–3 spring onions (chopped into small pieces)
  • 1 yellow pepper (finely diced)
  • 1 courgette (ribboned)
  • 8 tender stem broccoli spears (sliced in half lengthways)
  • 1 JAZZ™ Apple (grated)
  • 1 chilli (finely diced)
  • 2 tbsp Hoisin sauce
  • Coriander to serve
  • 2 tbsp soy sauce
  • 2 cups of leftover rice
  • Splash of water
Method

Fry the spring onions, chilli, broccoli and peppers in a hot pan for four minutes.


Add the courgette, the garlic and ginger and cook for a further four minutes.


Add the grated apple and hoisin sauce and cook for a further two to four minutes until the broccoli is to your liking. 


Remove from the pan and serve in a bowl!
