Leftover Lamb Flatbread

Ingredients
- 100g leftover lamb, shredded
- 50g Greek yoghurt
- 1 clove of garlic, crushed
- ½ lemon
- ½ red onion
- ½ jar of Opies cornichons and onions
- 30g feta
- Lettuce (shredded)
- Fresh mint leaves
- 2 flatbreads
Method
Mix the yoghurt and garlic clove with a squeeze of lemon and season well. Leave for at least ten minutes. Slice the red onion into rounds.
When ready to serve spoon the yoghurt over the flatbread, scatter over the lettuce leaves, lamb, feta, red onion, Opies cornichons and onions and finally some fresh mint leaves.
