Duck breasts have a considerable layer of fat under the skin, which means they have a tendency to cause the fire to flare up if you cook over too direct a heat. In this recipe the honey in the marinade also makes things prone to catching. If you get a big old flare-up the simplest thing to do is remove the food to a plate, allow the fire to calm down - perhaps brushing the grill bars clean with a wire brush - before carrying on.

I'm such a fan of achari spice mix that all my books include recipes that celebrate it. Achari Murgh Tikka has always been a family favourite. I first ate it as a young girl when our family visited Khyber at Fort in Mumbai, where it always feels like a special evening and the food is delicious. The decor is old school with painted murals on the walls that are dimly lit by decorative chandeliers from the '80s. Ghazals play in the background with chatter from the tables. It's like going back in time to your safe space. The menu is limited and focuses primarily on the cuisine from the north-west frontier of India. The achari spice mix includes fennel, cumin, mustard and nigella seeds, all coarsely crushed, but the secret is definitely using mustard oil. I recommend keeping a small bottle in your store cupboard. The pungent, savoury flavour lends an intense taste to the tikka.
Umami Mushroom & Halloumi Burgers
These super-juicy mushroom burgers are packed full of big umami flavours. The dried porcini powder in the butter adds an incredible savoury depth, which is enhanced with chilli, garlic and lemon zest. A thick slice of glazed halloumi makes each burger satisfyingly chunky.

The paste used in this recipe is ideal for stuffing fish, meat and vegetables but it can also be used as a marinade. Recheado masala is a Portuguese-inspired recipe from Goa, recheado meaning 'stuffed'. It is much more common to fry recheado fish but I like to char it over the fire. If you would like to fry it, just cover the bottom of a frying pan with oil and fry over direct heat until cooked through and crispy on both sides.
