Chicken tikka has long been one of the UK’s most loved flavours and makes a great sandwich, pitta or wrap filling. But this is what it was born for – to eat with hot naan or chapati.
You can buy mozzarella almost anywhere but its more luxurious cousin, burrata, is still something of a rarity other than in the largest of supermarkets and the best delis. Burrata is basically mozzarella stuffed with cream: decadent in the extreme, and all the better for that. I like to eat this while the kale is still hot, as I like the contrast with the cold creamy burrata.
This is the most divine, indulgent and irresistible pud. Don’t skimp on the cream or jam. Better forgo it altogether than try to make it healthy! It’s best made with ripe fresh apricots. If using canned fruit, roast them anyway – it will deepen their flavour.
