- For the Tomato Corn Relish
- 1 tbsp olive oil
- 4 spring onions
- 300g cherry tomatoes
- 1 fresh corn on the cob (cut kernels)
- 1 tsp Gran Luchito Chipotle Paste
- Salt and freshly ground black pepper (for seasoning)
- ½ red onion (finely diced)
- 1 handful coriander (finely chopped)
- 1 lime
- 1 tbsp extra virgin olive oil
- For the Chipotle Crema
- 200ml creme fraiche
- 1 tsp Gran Luchito Chipotle Paste
- ½ a lime (juice and zest)
- 1 tbsp olive oil
- For the Halloumi
- 500g halloumi (cut into 1cm thick slices)
- 2 tbsp olive oil
- 1 tbsp Gran Luchito Smoky Chipotle Fajita & Taco Mix
Heat up a frying pan with the olive oil. Add the spring onions, cherry tomatoes, corn kernels, chipotle paste, and season with a pinch of salt and black pepper. Stir and cook for five minutes until the corn cooks through, and once ready, remove from the heat.
In a bowl, place the corn-tomato mixture. Add the red onion, coriander, lime juice and extra virgin olive oil. Season to taste, and mix with a spoon, then reserve.
Make a quick chipotle crema by mixing all of the ingredients in a bowl and whisking until smooth. Season with salt and pepper, then reserve.
Prepare a non-stick pan with a tablespoon of the olive oil then drizzle the remaining oil over the halloumi pieces and sprinkle the smoky chipotle fajita and taco mix on top. Pan fry the halloumi until golden brown on both sides, then remove from the pan when ready, and cook the rest of your halloumi.
Time to serve your tacos! Warm up the soft taco wraps over a hot pan, then serve with pieces of warm pan-fried halloumi. Add tomato-corn relish and drizzle with a good amount of chipotle crema on top.
