Miso Soup

Delicious, quick and packed full of as many veggies as you want, this soup comes together in a flash

This nourishing miso soup is made using the Bird & Blend Tea Co Chinese Treasures tea but you can substitute it for any other green tea, including the Mojitea or Ankara Apple. Add tofu, mushrooms, green beans, or whatever veg you fancy.

Ingredients
  • 4 tsp green tea
  • A splash of cold water
  • 700ml boiled water
2 tbsp white miso paste
  • 300g block silken tofu, cut into 2cm cubes
  • OPTIONAL GARNISHES
  • Drizzle of sesame oil
  • Sliced spring onions
  • Sprinkle of toasted sesame seeds

Method

Brew the green tea leaves with the cold water, immediately followed by the boiled water, for three minutes, then strain into a pan.

Add the white miso and bring to the boil.

Divide between four bowls and top with the silken tofu and garnishes of your choice.
