Put your chicken breasts onto a chopping board and season generously with salt and pepper. Tightly wrap two slices of bacon around each chicken breast, covering it well. Secure the bacon with cocktail sticks or toothpicks to stop it flying off during air frying.
Gently place the bacon-wrapped chicken breasts in the air fryer basket/drawer. Set the temperature to 180C and air fry for 28 minutes, or until the chicken reads an internal temperature of 70C or above.
While the chicken is air frying, add all the barbecue sauce ingredients to an air fryer-safe dish or silicone pan, and mix with a fork.
When the air fryer beeps, remove the chicken from the air fryer and remove the cocktail sticks that have held the bacon in place.
Place the chicken in the dish so that it’s sitting in the barbecue sauce, then sprinkle both the grated cheeses over the chicken.
Air fry the hunter’s chicken at 180C for a final five minutes to melt the cheese and warm up the barbecue sauce before serving.
